  • 1 Cup Basmati Rice

  • 2 cups water for a standard pot (1 3/4 cups water for an Indian cooker and 1 1/4 cups for an instant pot).
  • 1 green chili (sliced/chopped)
  • ½ Tsp Salt
  • Cashew or Kaju Nuts and Raisins

Whole Spices:

  • 1 Strand Mace Or Javitri
  • 1 Star Anice Or Chakri Phool
  • 2 Inches of Cinnamon Or Dalchini
  • 4 Cloves Or Laung,
  • 3 to 4 Green Cardamoms Or Elaichi
  • 1 Bay Leaf Or Tej Patta

Recipe to Make Healthiest Ghee Rice

Step 1: Wash the Rice

Rinse 1 cup of rice until the water becomes clear. This step is crucial as it removes excess starch from the rice, allowing it to become fluffy and separate. Soak it for twenty to thirty minutes.

Step 2: Drain Rice of Water

After 20 to 30 minutes, drain the water and set the rice aside.

Step 3: Cut Onion and Pepper

Meanwhile, thinly slice a medium-sized onion and slit or chop a single green chili.

Step 4: Prepare a plate with 1/4 cashews and 1/4 raisins.

Step 5: Heat Ghee

In a pot or pan with a thick bottom, melt 3 tablespoons of ghee. Keep the flame low to avoid burning the ghee. 

Step 6: Frying Nuts

Add cashews to the pot once the ghee has melted and is hot. Fry a few cashews until they have a golden hue, but do not burn them.

Add the raisins now. Fry the raisins in ghee until they begin to expand. By stirring continuously, the cashews and raisins do not become too brown and bitter. Remove the fried cashews and raisins, remove any excess ghee, and set aside.

Step 7: Add Whole Spices

Now, add all whole spices to the melted ghee and stir. Allow the spices to become fragrant and crackle for a few seconds, but do not allow them to burn. Add the sliced onions and stir quickly.

Continue stirring the onions until they become golden and caramelized. Add green chili and rice that has been soaked into the pot. Now, carefully add rice.

Stir the rice with the seasonings for a few minutes so that the ghee evenly coats the rice. Do not overmix the rice, as this will result in broken grains.

Step 8: Pour water over rice

Add 2 cups of water or the amount of water specified by the pressure cooker or instant pot used. Using a standard pot, I added 2 cups of water. Add salt, then taste the water to determine if more is required. Ideally, the water should contain a trace of salt. Add half a teaspoon of lemon juice (optional). Completely encase the pot with a lid.

Step 9: Rice is cooked

If necessary, increase the temperature to bring the water to a simmer, then reduce it to low heat. Allow it to simmer for 8 to 9 minutes until the rice is cooked and all of the liquid has been absorbed. Remove the lid after 5 to 6 minutes and fluff the rice with a fork.

Step 10: Begin serving on the plate

Transfer the ghee-rice to a bowl or plate for serving. Cashews, raisins, and coriander leaves are used as garnishes. Serve ghee-rice with any gravy, such as vegetable kurma, curry, dals, or even egg roast, or eat it plain.
